I recently learned that although Western restaurants existed in Hong Kong in the 1940s and 50s, their high prices meant that most people still had little access to Western cuisine.
The emergence of the "bing sutt" (a type of Hong Kong-style cafe) changed everything.
With cheaper bread, egg tarts, coffee, and milk tea, it made Western food, previously out of reach for most people, more accessible to the general public.
Later, char siu rice, congee, noodles, and rice dishes were added, and the bing sutt gradually evolved into today's cha chaan teng (Hong Kong-style cafe). It continuously absorbed food from different regions, and through decades of fusion, it has become one of Hong Kong's most distinctive culinary cultures.
Interestingly, what began as simply making food more accessible and enjoyable for more people has grown into a unique aspect of Hong Kong culture.
Is it true that all truly vibrant things begin with a simple need? First, they make food accessible to more people, then they grow and evolve with their users, slowly developing their own unique character.
Today I met many new and old friends. During our conversation, I noticed that the most frequent topics about Binance were now TradFi and bStocks, with many expressing surprise at the trading volume of some TradFi pairs exceeding that of their underlying stocks.
